Blueberry Ice Cream

Ingredients
- 14 ounce can full-fat coconut milk
- 1/2 box silken aseptic tofu
- 2 1/2 tbsp vodka
- 2 tbsp soy lecithin granules
- 3/4 cup corn syrup
- 1/4 cup granulated sugar
- 1/2 tsp vanilla
- approximately 15 ounces organic blueberries
- pinch salt
- 1 tbsp tapioca starch
- 1/8 tsp xanthan gum
- Dissolve lecithin in vodka.
- Blend all ingredients together until smooth.
- Chill in refrigerator overnight.
- Make according to your ice cream maker's instructions.
