Hoisin and Ginger Seitan Sausages

Ingredients:
- 1 3/4 cups plus 2 tbsp wheat gluten
- 6 tbsp nutritional yeast
- 1 1/2 tsp ginger
- 1 1/2 tsp garlic powder
- ~ 3/4 tsp ground fennel
- ~ 3/4 tsp ground coriander
- 1/2 tsp black pepper
- 6 tbsp hoisin sauce
- 2/3 cup water
- 4 tbsp brown rice vinegar
- 3 tbsp soy sauce
- 2 tbsp sesame oil
- 1 tbsp canola oil
Instructions:
- Preheat oven to 300 degrees.
- Combine dry ingredients.
- Combine wet ingredients.
- Add wet to combine and knead to combine.
- Shape roughly into logs.
- Roll each log tightly in foil, twisting the ends. For this amount and cooking time, I made 7 sausages.
- Bake for 30-40 minutes.
- Cool in foil for 10-20 minutes.
Notes:
- Doubled and slightly altered from this recipe.
- Water decreased from the original because I think my homemade hoisin sauce is thinner than it "should" be.
