Raspberry Ice Cream

Ingredients
- 16 ounces frozen raspberries
- 1 can coconut milk
- 3/4 cup sugar
- about 1 tbsp oil (to oil measuring cup)
- 1/4 cup corn syrup
- 1/2 box aseptic silken tofu
- 3 tbsp vodka
- 2 tbsp lecithin granules
- 1 tsp vanilla
- pinch salk
- 1 tbsp tapioca powder
- 1/8 tsp xanthan gum
- Heat sugar with coconut milk "water" in a sauce pan, until dissolved.
- Dissolve lecithin with vodka.
- Thaw berries.
- Mix all ingredients in a food processor until smooth.
- Chill overnight.
- Make ice cream according to your ice cream maker's instructions.
